Chef Paul Wilson has today announced that he will be joined by Executive Chef Dave Marshall and Wine Director Virginia Selleck when his eagerly-anticipated restaurant Wilson & Market opens its doors in the coming months.
Chef Dave Marshall has been trained by the legendary Pierre Koffmann and Brit Pack stars Paul Wilson, Jeremy Strode, Donovan Cooke and most recently Ian Curley of the European group, assisting with the launch of Kirk's Wine Bar and French Saloon.
Sommelier Virginia Selleck has worked at some of Melbourne's leading venues including Cumulus, Inc.; Rockpool Bar & Grill with David Lawler; and The Stokehouse, Prince Wine Store and Bellota Wine Bar with Phillip Rich. Selleck is also the co-founder/owner of Magnum + Queens, a sommelier-selected online wine store offering monthly selections and weekly specials which will be constantly changing and ahead of the trends. She joins Wilson & Market as Wine Director.

Wilson & Market - which is located at the Prahran Market, 163-185 Commercial Road, South Yarra - will open in three stages.
The first stage - to-go window Mr Wilson's Tuckshop - is set to open to the public on Sunday 12 March; the second stage - the 40-seat Wilson & Market lifestyle cafe - will open in mid-April; and the third stage - the 200-seat Wilson & Market restaurant - will open in early May.
Mr Wilson's Tuckshop is a to-go window located on the eastern side of Wilson & Market, opening up onto the market square. Framed by a custom mural of an arabica coffee plant created by Mahon & Band and painted by local artist Colin Shepard, Mr Wilson's Tuckshop will be the place to redefine your expectations of take-away food.
Using only ethically-farmed produce, prepared with nourishing and wellbeing sensibilities, expect unique St Ali coffee and mouth-watering treats by market chocolatier Tad Lombardo; refreshing native aqua frescos fruit drinks; biodynamic salads and vegetable dishes; and market-centric rotisserie and BBQ sandwiches and snacks.
Mr Wilson's Tuckshop will be open from Sunday 12 March from Tuesdays and Thursday to Sunday from 7:00am till 5:00pm.
The Wilson & Market 50-seat lifestyle cafe will offer unrivalled market-inspired seasonal breakfasts alongside all-day clean and nutritious modern Australian café food. Expect Ottolenghi-inspired salads; simple wood-fired grilled vegetables; and farinaceous dishes.
The Wilson & Market luxe brasserie and bar will be a 200-pax destination where food and wine will shine in equal measure. It will feature Melbourne's first crustacean bar; a custom-built rotisserie dishing up slow-cooked heritage and ethically-bred meats and poultry, in particular a unique wood-roasted chicken (destined for infamy); creative vegetable dishes using biodynamic and premium produce from the award-winning Transition Farm and legendary market suppliers; impeccable wood-grilled sustainable seafood; and the finest local cheese and Tad Lombardo-curated chocolate delicacies and trifle from a custom-designed dessert trolley.
Wilson & Market's vibrant wine list of 100+ drops will change constantly, featuring daily specials, half bottles, magnums and more from the small and unique producers to established favourites. Other drink highlights include eight food-centric beers on tap, artisanal gin & tonic bar and the W&M wine wall, where diners can select a bottle to enjoy at their table.
Aesthetically, the surroundings will aptly match the impressive food and wine offering with the design fit-out by Kestie Lane Studio, unique bathrooms by Kate Challis and furniture by Chris Connell.
The Wilson & Market lifestyle cafe will open on Tuesdays and Thursday to Sunday from 7:00am till 5:00pm from mid-April.
The Wilson & Market luxe brasserie and bar be open from mid-May from 5;30pm - midnight, Sunday to Thursday, and from 5:30pm - 1:00pm on Friday and Saturday.
